2 packs shirataki noodles
1 cup sliced mushrooms
1/2 red bell pepper, chopped
1 cup carrots, chopped
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp low sodium soy sauce
2 tsp sesame oil
1 tsp stevia (sugar substitute)

1. Heat olive oil in a large skillet or wok over medium-high heat
2. Add garlic, mushrooms, pepper, and carrot
3. Cook until tender (about 3-4 minutes)
4. Add noodles of your choice (drain well and rinse!) and the rest of the ingredients
5. Stir or toss to combine noodles with sauce
6. Heat through and remove from heat
7. Serve and enjoy!
