I learned to make kale soup from Maria, the kid's Vova. I've been making it for years but somehow her soup still wins️. She’s from San Miguel, true old school Portuguese... I have a little Portuguese in me, I say it’s all in my ass. Thankfully, she taught me to cook early on when the kids were just babies! Today’s after school snack is a bowl of my kale soup. Sometimes, I like to change it up a bit and use whatever extra stuff I have laying around.
Ingredients:
1 pound cooked chicken cut up
1 pound crumbled linguica
1 bag frozen kale
1 cup chopped onions
2 cups shredded carrots
1 heaping tbsp garlic
Can of white beans
Dry Seasonings: chicken bouillon, Italian soup mix, pepper/Himalayan salt (for taste), for authentic flavor throw in some white pepper (be careful-it adds spice)
Directions:
Throw in a crock pot for 6-8 hours or simmer in a pot for 1-2 hours.
